Dahi Sugar, milk or pasteurized milk, salt, mustard oil and saffron oil
2 cups Dahi powder Dahi milk or Pasteurized Milk (1 cup or half cup), 1/2 tsp Salt (to include salt) and 1/2 tsp Black Mustard Oil (to use for saffron sauce) or Soy Sauce (If you don’t have Dahi sugar, then either just reduce its quantity by half)
Makes one Cup –
Dahi powder x 2 cups water = 8/8 cup Dahi sugar x 4 cups water = 8 cups
Mix both powders together with equal amounts of water to create a thick paste then divide it with a spoon between ice-lined plates or crockery/dishes. When making your own Dahi Bhalley, you should always begin preparing according to their recipe given for this one. It helps to ensure that you are not getting burnt while cooking. Now, in the next step, place a plate in hot water (for instant absorption) on top of Dahi Sugar. Add sesame seeds, spinach and lemon juice with your favourite spices then top it up. Don't forget to place a bowl and cover it with more Ice water, since you are almost done. After, spread more Dahi Sugar around these plates then put the mixture inside. Repeat until all layers are covered. Once done, remove the rice from heat and serve in bowls with plenty of chutney. How to prepare the saffron sauce
Ingredients required
Saffron Oil
Ghee
Turmeric
Mustard Seeds
Chocolate, crushed mint leaves
Crushed pistachios nuts
Water
Dahi powder
Directions, To prepare the saffron oil: Take five spoons of ghee and boil it until it gets to boiling.
Take a handful of crushed pistachio nuts and crush them as much as possible. Then just add a cup of crushed pistachios with equal quantities of melted ghee and mix everything. Pour it over the saffron oil in a small saucepan. Heat it up slightly. Keep stirring till its thickened a bit then add it to the glass of the saucepan. Stir around this mixture for 15 minutes. Leave it aside. Stir it well in this ghee, so that it doesn't separate in the saucepan.
Mix 2 cups of Dahi and 1 cup Dahi Cream with equal volumes of water, mix all this with another 1 cup of Ghee. Mix together the whole mixture and serve a steamed rice with this sauce.
