How To Make Beef Kofta Curry
You can't go wrong with beef kofta, and this recipe is the perfect way to make it a bit of a treat for yourself for your loved ones on Christmas Day or any other holiday. It's also very easy to prepare, so you won't have to use an expensive store-bought one. Plus, the ingredients are all found in your local supermarket.
Ingredients for Beef Kofta Curry
1/2 cup wholemeal bread flour
2 cups warm water
2 teaspoons fine sea salt
1 cup finely ground black pepper
1 cup panko (optional)
1 1/4 cups white chickpeas (2 cups chopped)
1 cup canned beans (2 cups packed into freezer bags, if desired)
1 8 oz can red lentils, drained, and rinsed
1 1/2 cups milk
2 tablespoons unsalted butter
3 tablespoons extra virgin olive oil, divided
1 garlic clove, minced
1 ½ cups chicken stock or gravy
1 5 oz can whole plum tomatoes, quartered
1 medium onion, diced
1 pound fresh spinach, stemmed and cut into cubes
2 cups frozen brown rice cubes in large enough pieces
Directions for Making Beef Kofta Curry
Preheat oven to 350 degrees Fahrenheit. In large bowl, sieve together flour, water, salt, and pepper and set aside.
In large saucepan over high heat, add cubed flour; whisk to form rough paste. Add wet mixture to dry mixture. Bring up to a boil. Whisk until thickened. Pour into greased 9 1/2 inch square baking dish. Place cauliflower, squash, zucchini, celery, cabbage, carrots and spinach in prepared baking dish. Sprinkle cheese over top and cover with remaining saucepan. Pour chicken stock or gravy over vegetables and tomatoes and bake for 45 minutes. Serve hot with green onions as a side and roast red peppers and onions. Top servings with sliced avocado and sriracha sauce. Bake only 2 hours at 350-degrees F for gravy. Let stand 15 minutes before serving.
